I'm not a jQuery expert, but it's not so hard do accompplish that.
I guess making the appropriate ajax call from a .onchange() event
should do the trick.

If I'm not wrong, there's some user-made versions of ajax-helper
to Cake1.2 that resembles the prototype to jquery.
