Short answer, you can't, at least cell tables weren't designed with that in mind. I'm sure there is some hack which will enable it, but there is a big performance hit using widgets in a celltable. That is why Cells were created. 

You shouldn't have to hand roll too much html. Take a look at ActionCell, CompositeCell etc. A lot of the plumbing is already there and you should still be able to go with mostly Java.
