Otherwise, do you know the solution ?
You could use getElement().setPropertyString("itemprop", "image") in your Java code.
Or you could use a <link/> element next to the <g:Image/>, see "canonical reference" in http://schema.org/docs/gs.html#advanced_enum
That being said, do you know any real use of that data besides SEO? (which wouldn't look at your dynamic elements, unless you use #! and serve the data by "running" the GWT app on the server)
