GWT is mostly a client-side library, so any server you want.

The only restrictions depend on the client-server communication method you want to use. GWT comes with basically three ways of doing that; 1) RequestBuilder, which you can use to transfer any format (text, xml, JSON) or style (RESTful, SOAP), 2) RPC, and 3) RequestFactory. For these last two you need a JVM-based server. GWT comes with an embedded Jetty server out of the box.
