Is there some documentation available that explains how to convert a generator to an incremental one ? In my project we have a few of them so for the future it might be better that I migrate them.

No. You can take a look at AbstractClientBundleGenerator and ServiceInterfaceProxyGenerator which both extend IncrementalGenerator.
